What it is
Chablis, Burgundy, France. 100% Chardonnay — but nothing like the heavy, oaky, buttery styles that put some people off white wine.

This is cool-climate Chardonnay grown on limestone soils. The result is a wine that trades richness for precision. High acidity. Minerality. A "stony" backbone that feels more like a mountain stream than a vanilla milkshake.

Thomas Pico is a highly regarded producer in the region. This is Chablis made the way Chablis should be: lean, focused, and honest.

The terroir
Northern Burgundy. Cool climate. Limestone soils — ancient seabed, full of fossilised shells. That geology gives the wine its signature minerality and racy acidity. No heavy oak barrels masking the fruit. Just the grape, the soil, and the climate.

What it tastes like
In the glass: pale lemon. Bright.

On the nose: green apple, lemon, white flowers. A unmistakable scent of wet stone — like rain on concrete or river rocks.

On the palate: dry, fresh, crisp. Green apple and lemon lead. A hint of saline, almost salty, especially with shellfish. Light body. No obvious oak. Very clean, very pure. The finish is long and stony.

This is not a "fruity" wine. It is chiselled. Focused. Refreshing in the way a cold glass of sparkling water is refreshing — but with far more to say.

When to open it
  • With oysters, shellfish, sushi, simple grilled fish — its natural habitat
  • As an aperitif for anyone who likes their whites dry and sharp
  • For whisky drinkers who prefer clean, precise styles (Japanese whisky, lighter Speysides) — this offers minerality and structure, not sweetness or richness
