🍷 Pauillac 2019 — Left Bank Bordeaux
Classic Pauillac. Cabernet-driven. Built for steak cellars and serious dinners.
"Classic Pauillac Bordeaux — Cabernet-driven, dark fruit and cedar. Blackcurrant, tobacco and graphite notes, with firm but ripe tannins. 2019 is a ripe, high-quality vintage: concentrated yet fresh. Great with steak or lamb, and good potential to age a few more years."
What it is
Pauillac, Left Bank Bordeaux, France. The heartland of powerful Cabernet-based red wine — home to three of the five First Growths. This is the reference point for "classic Bordeaux."
The 2019 vintage was ripe and generous, with excellent concentration and fresh acidity. A high-quality year that delivered power without heaviness.
This is a Cabernet Sauvignon-led blend with Merlot and small amounts of other Bordeaux varieties. Full-bodied, structured, and built to age — though approachable now with a little air.
The place & vintage
Pauillac sits on the Left Bank of the Gironde estuary. Gravel soils, perfect drainage, ideal for Cabernet Sauvignon to ripen slowly and develop deep colour and firm tannins. The 2019 vintage combined warm, dry conditions with enough freshness to keep the wines lively. Concentrated fruit, polished tannins, and the structure to last.
What it tastes like
In the glass: deep, dark ruby with purple highlights — it looks expensive before you even smell it.
On the nose: blackcurrant, blackberry, cedar, tobacco. Graphite and pencil shavings — the unmistakable Pauillac signature. Hints of spice and vanilla from oak ageing, but integrated, not dominant.
On the palate: dry, full-bodied, generous. Firm but ripe tannins give grip without aggression. Flavours of blackcurrant, dark plum and blackberry, layered with cedar, tobacco and a touch of cocoa-coffee. Fresh acidity keeps it moving. Long, savoury finish with a subtle earthy, mineral note.
Classic Pauillac character: structured, serious, unmistakably "cassisy." Cigar box and graphite over jammy sweetness. This is not a soft, easy-drinking red. It has opinions.
When to open it
-
With steak, lamb, roast beef, duck, game, hard cheeses — its natural territory
-
For customers looking for "classic Bordeaux" — something serious to lay down or gift
-
For whisky drinkers who like firm, oak-influenced, complex spirits (well-aged Speyside or Highland malts, bolder sherry cask expressions) — this offers dry structure and depth, not soft, sweet fruit

Caring for your whiskies
Do not store whiskies long term horizontally as the high ABV alcohol will damage the corks overtime!
