Then, right beside it, you notice something else: an Adelphi Selection Caol Ila, 10 years old, bottled at 55.4% from a single cask, only 310 bottles produced. Different label. Different strength. Different price. Both say "Caol Ila" on them.

What's the story? Welcome to one of the most exciting — and most misunderstood — corners of the whisky world: independent bottling.


The Simple Answer: Official vs Independent

An official bottling (OB) is a whisky released by the distillery under its own brand. Think Balvenie Caribbean Cask 14, Macallan Harmony Collection, or Laphroaig 10. The distillery controls production, maturation, blending, and marketing from start to finish.

An independent bottling (IB) is a whisky released by a separate company — an independent bottler — that purchased casks from a distillery and bottled them under its own label. Since our establishment in 2016, Caskells has been on a mission to share our passion for exceptional whiskies, with a special focus on high quality IB whiskies sourced from Independent Bottlers from across Scotland.

The source spirit is the same. The difference is who selected, matured, and bottled it — and every decision they made along the way.


How Does It Work?

Scottish distilleries produce far more whisky than they need for their own official range. Much of it goes into blended Scotch — the Johnnie Walkers and Famous Grouses of the world. But some casks are sold to independent companies, who then age them, select the best, and bottle them under their own name.

This tradition is nearly 200 years old. It's completely legal, well-established, and responsible for some of the greatest whiskies ever bottled.


The Independent Bottlers You'll Find at Caskells

Caskells' directly imported and distributed brands include Adelphi, Ardnamurchan, The Kinship, The First Editions, Hepburn's Choice, Murray McDavid, Gleann Mor Spirits, Edinburgh Whisky, and Woodrows of Edinburgh. We also carry selections from Berry Brothers & Rudd, Chieftain's, Dram Mor, Drunken Master, and The Red Cask Co., among others. Adelphi

Adelphi is known for meticulous single cask selection, and they also own Ardnamurchan Distillery on Scotland's west coast. Their range spans everything from the accessible Adelphi Selection series to rare limited releases like their stunning 36-year-old Mortlach, distilled in 1986, part of Adelphi's Limited collection at HK$8,800. They also produce the brilliant Breath of… series, where Adelphi chooses casks that best represent the characteristics of each Scottish region.

The First Editions (Hunter Laing)

A great range of cask strength whiskies under Hunter Laing, featuring different distilleries with their own characteristics, with lots of subtle yet unique differences between each barrel. One of the most exciting bottles on our shelves is their Tormore, distilled in 1988 — only 150 bottles — a 30-year-old single malt from a distillery most people have never heard of, priced at HK$3,980.

Murray McDavid

Acclaimed and respected independent Scotch whisky bottler Murray McDavid was established in 1996. It is based at the closed Coleburn distillery, in the heart of Scotland's Speyside region, ageing whisky in quality oak casks from around the world, famed for their excellent single cask bottlings. Their Benchmark series is particularly creative — for example, their Caol Ila 12-Year-Old was initially matured in traditional oak casks before being finished in Wild Beer Stout casks — a unique and experimental choice.

We liked Caol Ila so much that we got two quarter cask bottlings — our own Caskells bottlings from quarter casks. We also offer our Secret Islay 15 Year Old — a peated single malt, 50% ABV, with only 93 bottles produced, at HK$1,600. When we say we love our independent bottlings of Scotch, we really mean it!


What Makes Independent Bottlings Different?

Here's where things get genuinely interesting. Let's talk about what you'll actually notice in the glass.

Single Cask, Single Story

Most official bottlings vat dozens or hundreds of casks together to create a consistent, recognisable flavour. That's a real skill — but it averages out individuality. An independent bottling is usually from a single cask, meaning every natural quirk of that barrel — the char level, the wood grain, its position in the warehouse — comes through in the whisky. When it's gone, it's gone forever.

Take a look at the numbers: the Glen Elgin distilled in 2008 spent 15 years maturing in a single cask under the watchful eye of Adelphi, and a total of 265 cask-strength bottles now join the collection. Compare that to a standard OB release of thousands or millions of bottles.

Cask Strength

Official bottlings are typically diluted to 40-46% ABV. Independent bottlings are often released at cask strength — the natural ABV as it comes from the barrel — which usually means 50-60%+. Our Adelphi Selection Caol Ila sits at 55.4%. Murray McDavid's Miltonduff is bottled at 53.9% ABV — this cask-strength whisky delivers a bold yet refined drinking experience.

What does this mean for you? More concentrated flavour, more oils and esters, more texture. And you can always add water to bring it down to your preferred strength — you're in control.

Non-Chill Filtered, Natural Colour

Most official bottlings are chill filtered (to prevent haziness) and colour-adjusted with caramel colouring (E150a) so every batch looks identical. Independent bottlers almost universally skip both steps. Take Ardnamurchan's releases — bottled at 50% ABV, non-chill filtered, and presented at natural colour. What you see is exactly what the cask produced.

Transparency

Check the label on an independent bottling. You'll often find the distillation date, bottling date, cask type, cask number, and exact bottle count. Murray McDavid's Ledaig 15-Year-Old was distilled in 2009, bottled in 2024, spent its final maturation period in Murça Tawny Port casks from the Douro Valley in Portugal, was bottled at 53.2% ABV, with a limited production of 1,547 bottles. That level of detail is rare on official releases.

The official gives you the signature. The Adelphi gives you something more personal.

Example 3: The Hidden Gems

Some of the whisky world's best-kept secrets are distilleries that rarely release official single malts. Glenburgie is a major constituent of Ballantine's and is fairly rare as a single malt bottling, with Independent Bottlers being the source. Likewise, Tormore, Dailuaine, Miltonduff, and Aultmore are distilleries most people have never encountered — but through independent bottlers, you can taste their single malts. Tamdhu distillery in Speyside has most of its own spirit going into blends such as Famous Grouse.

This is one of the great joys of IB whisky: it gives you access to distilleries you'd never otherwise experience.


Price and Value: How to Think About It

Neither OB nor IB is automatically more or less expensive. The Adelphi Loyal Old Mature Private Stock blended Scotch starts at just HK$330 — light smokiness on the nose, ripe pear sweetness, light nutty flavours with hints of sea breeze, a very easy going drink that highlights the best characteristics of Scotch. Meanwhile, the Adelphi Mortlach 36 Year Old sits at HK$8,800.

The real value equation is about what's in the glass. A cask-strength IB at 55% contains significantly more pure alcohol per bottle than a 40% OB. You're getting more whisky per millilitre. Add to that the single cask uniqueness, the transparency, the natural presentation — and many IBs represent outstanding value even when the sticker price looks similar to an OB.


When to Choose OB, When to Choose IB

If you've never tried a distillery before, start with the official bottling. It's the house style — the map. Balvenie Caribbean Cask 14 (HK$900 at Caskells) is a perfect example of a beautifully crafted OB that teaches you what Balvenie is about.

Once you know what you enjoy, that's when independent bottlings come alive. They take you off-road. They show you a different side of a distillery you thought you knew. They introduce you to distilleries you've never heard of. And because each cask is unique, no two bottles are ever the same.


The Ardnamurchan Story: Where OB Meets IB Philosophy

There's one distillery that perfectly bridges both worlds. Ardnamurchan Distillery, located on Scotland's remote Ardnamurchan Peninsula, is one of the country's youngest and most innovative distilleries. Established in 2014, Ardnamurchan has quickly gained recognition for its commitment to producing high-quality, artisanal single malts. It's owned by Adelphi — an independent bottler — and its releases embody everything great about IB philosophy: non-chill filtered, natural colour, transparency, and creative cask work.

Their 2025 Sauternes release demonstrates the distillery's ability to pair peated spirit with active wine casks — the whisky underwent a split maturation process, initially aged in ex-bourbon casks, followed by secondary maturation in Sauternes barriques, balancing smoke with rich, fruit-forward sweetness. At HK$880, it's one of the most exciting value propositions in whisky right now.

Many IB releases also offer ages and cask types that the distillery itself doesn't release officially.
