Galloping toward your gullet, here comes our lovely horse (It’s a Connemara Pony). This is an extraordinary Irish Whiskey, aged to perfection over 21 years in a delightful marriage of ex-bourbon and Oloroso sherry casks. It delivers an elegant symphony of honeyed malt, dried fruits, and toasted oak, with undertones of dark chocolate, fig, and baking spices.
A small batch release of circa 1,000 litres each time
Non chill-filtered, and natural cask matured colour
NOSE
Whoa, horsey! A delicate equine with pineapples, peaches and light bananas. Hints of white peach and pear, a little vanilla and runny honey.
TASTE
Caramelized, candied nuts and light peppery notes. Banana, mango, and guava. Dry spice with some green tea pungency. Elegant age and displaying quality oak maturation.
